It was my husband’s co-workers’ birthday last week and I wanted to share with you all the birthday cake I baked her.
I love how fun and whimsical this cake is. It was really simple to make yet looked really impressive. The messy style is very forgiving and hides any flaws.
Since I was running short on time I just used a boxed Fun-Fetti cake mix and blue store-bought icing.
Making the chocolate shards was super simple – just melt some white almond bark in the microwave and spread-out on a piece of parchment or wax paper. To get the color swirls, I just dipped a toothpick in some food dye and swirled it around in the chocolate. Then I topped it with lots of sprinkles and left it out on the counter to harden. When it was firm chocolate again (about 30 minutes later) I used a knife to cut long shards.
The other aspect that took this cake over the top was the meringue kisses. I used a recipe from Cupcake Jemma – one of my new favorite You Tube bloggers. At first I was pretty intimidated by these things but they ended up being really easy. Even better, you only need 2 ingredients to make them!
The final element on this cake is the hot pink glaze. I made mine with powdered sugar, corn syrup, milk, and food coloring. If I had to do it over again I would definitely make it thicker next time. It was a bit too runny and pooled at the bottom of the cake. I had to do some re-touching once the glaze firmed.
I’m excited to try this cake again – It was so much fun to make. My sister-in-law has a birthday coming soon and I know she will love it. I’m already thinking about ways to incorporate her favorite color – lime green….
